The Laughing Lizard - Eleuthera’s Newest Lunch Hotspot!

The new Laughing Lizard Café, perched on the highest hill, just north of the picturesque township of Gregory Town, commands an impressive view of the surrounding landscape with a peek of Eleuthera's Caribbean seaside on the horizon.  The colorful and laidback surfer inspired interior provides an inviting atmosphere for enjoying Petagay Hollinsed-Hartmans's island fusion lunch creations. 

Hollinsed-Hartman, owner of the new lunch hotspot, recently moved to Eleuthera about a year and a half ago. She credits the success of the Café to date, which had a soft opening on December 1, 2008, to the consistent support of the Gregory Town locals, including; the likes of celebrity resident, Lenny Kravitz; visiting tourists from as far as Harbour Island and Winter residents from all over the island. And it's no wonder with tempting menu items, the likes of jerk chicken salad and wraps, Italian style panini and local homemade pumpkin soup, a favorite. The menu has fish, turkey, chicken and vegetarian dishes as its' main focus.   The Café also offers free WiFi, full bar and smoothies, with an attached local art gallery as a future goal.

Petagay, who originally hails from Jamaica and Key West, moved to Andros and opened up a world leading eco-tourism resort, Tiamo, before heading to the isle of freedom and creating this new vision, The Laughing Lizard.  She continues her eco-philosophy here, using as many local products as possible and has plans to change her menu as the year goes along to use different produce as they come in season.  According to Petagay, "The community has been amazing.  They bring me stuff that I didn't even know they grew, like eggplant, and every color and shape of tomato, pineapples, watermelon and fish."  She's been blown away by the reception she's received in the community saying, "It has been phenomenal… they've just opened their arms and I've been completely accepted… people here are very open and they watch out for me."

The proliferation of the lionfish population in our waters is of special interest and concern to Petagay, who is presently promoting the catching and eating of this species, and hopes to organize a lionfish tournament soon. 

Also in keeping with her sustainability ethos, all of her 'to go' materials are biodegradable, from plastic bags to straws and cups and her utensils are made of corn which she says, "would dissolve in the natural environment."

The Laughing Lizard Café is open six days a week from 11am 'til 3pm and closed on Sundays.
